I have celiac disease and have to avoid wheat and contact with wheat. Yes, I know I’m taking a risk eating at a sub place, but I have never gotten sick from my GF sub made at this location. They have a separate allergy area and use a different knife. They change gloves and are conscious of the need to avoid cross-contamination. The result?
